Honey Ice Cream

(Makes 1 pint ice cream)

You need:

¼ pint whole milk
½ pint double cream
125g honey
2 tsps vanilla extract

How to make:

  • In a saucepan, stir together milk, cream and vanilla extract.
  • Warm gently until blended (but do not boil), then stir in the honey.
  • Let it cool.
  • Pour into a basin, stir.
  • Freeze. Whisk well once every hour for four hours.
  • Freeze until frozen.
  • Decorate with red and green jelly sweets, if liked.

  • 1.5 cups – fresh berries *, divided
  • 1 tablespoon – butter
  • 1/3 cup – honey
  • 8 – frozen waffles, toasted


Purée 1/2 cup berries in a blender or food processor; set aside. In a small saucepan over medium heat, melt butter. Add honey and bring to a boil; simmer 2 to 3 minutes, then add berry purée. Continue to simmer 2 to 3 minutes more until syrup thickens slightly. Set honey syrup aside and keep warm.

For each serving, place 2 waffles on plate. Top one waffle with 1/4 cup fresh berries. Drizzle with 1/4 of syrup and top sandwich with remaining waffle.

*Raspberries, strawberries and blueberries work well.

honey chocolate sauce

You won’t believe how easy this is to make. It’s delicious served over ice cream. Make sure you have adult help when pouring the sauce into a jar.
Makes 1-1/4 cups

You need:

1/4 cup honey
1 cup chocolate chips
2 Tbsps butter or margarine
1 teaspoon vanilla essence

How to make:

    • In a medium microwaveable bowl, combine all ingredients; mix well.

    • Cover with waxed paper and microwave on HIGH (100%) 1 minute and stir.

    • Microwave 1 to 1-1/2 minutes longer.

    • Pour into a jar. Cover with a lid. Keep refrigerated.
